Chef Peter J. Hemsley celebrates the end of salmon season with this week's special: Salmon Wellington.
This style of cuisine is reminiscent of Chef Peter's time working in France under the world-renowned Alain Passard. Combining King Salmon loin, spinach, hard boiled eggs and house made puff pastry, the dish cooks in the oven until the puff pastry is flaky and crisp, with tender salmon in its center.
