Available exclusively at the bar, The Eight Course Cocktail Tasting Menu is a seasonal expression of Bar Director Trevin Hutchins’ and Bar Manager Michael Nathan’s approach to flavor, memory, and place. This culinarily driven beverage experience includes an array of low ABV and miniature, full-proof cocktails.

Featuring a diverse lineup of distillates made in house via rotary evaporator, these truly unique cocktails explore foraged and oceanic flavors like eucalyptus, mushrooms, and anchovy. In tandem with the culinary program, this menu is a tribute to the water.

 

Driven by technique with a classical structure, the cocktails are meant to transport the guest to global regions that revolve around the water. For example, the North Atlantic, a Ramos Gin Fizz variation with Candy Cap Mushroom Calvados and brioche cream, is inspired by Trevin's family recipe for Thanksgiving stuffing. Bay of Biscay, an Adonis riff with Single Estate Manzanilla Sherry, 20 year Vermouth, and olive and anchovy distillate, is served in a hand blown porrón, accompanied by an olive, anchovy, and guindilla pepper pintxo that is meant to evoke the Basque region of Spain. With limited seatings each night, this is a unique cocktail experience not found anywhere else.
